TAMARI & MAPLE DRUMSTICK BAKE
Mar 12, 2021There is nothing better than a one tray bake and you can easily mix up this recipe with tofu, tempeh or even chickpeas instead chicken drumsticks. For those who do want to try the chicken, drumsticks are a cheap cut of meat and I often find organic drumsticks on sale too. All round you’ll be ticking off the essentials of a balanced meal with protein, complex carbohydrates and veggies!
Serves 4
Ingredients
8 x chicken drumsticks
2 x small sweet potato, cut into 1 cm rounds
2 x bunches broccolini
4 x handfuls green beans
2 tablespoons sesame seeds
4 x spring onion
2 x handfuls coriander
Sauce:
1/3 cup tamari
¼ cup maple syrup
1 x red chilli, finely chopped
½ x lemon, juiced
1 x garlic, crushed
2cm piece ginger, shaved
Directions
You can combine all ingredients for the sauce and marinate the drumsticks the night before or up to one hour before if you wish. If not, follow the directions below.
Preheat oven to 180’C. Layer sweet potato in the base of a large baking dish and place the drumsticks on top. Combine all ingredients for the sauce and pour over before baking for 20 minutes. After 20 minutes, add the broccolini, green beans and sesame seeds and bake for another 15 minutes. Before serving sprinkle on spring onion and coriander.
