CACAO, COCONUT & SWEET POTATO MUFFINS
Feb 06, 2017You wouldn't think it's possible..gluten free, sugar free, dairy free, moist, delicious muffins! Well here they are. With my 21 Day Detox starting next Monday I need to tick all of those boxes so I've kept them gluten free by using a combo of coconut and almond meal (with baking powder to help rise), and I have only used 2 mashed bananas as the sweetener. The sweet potato keeps them nice and moist and also adds a touch of sweetness and I added some protein powder which comes along with the gift box included in the detox program.
If you're a 90% dark chocolate fan, you will be in love, if you're not, throw in some blue or blackberries to cut through the bitterness of the cacao. If you're not detoxing, 1 tablespoon of maple syrup/raw honey could also be added.
